Recipe: Banana Chai Cookies (Vegan, Gluten Free)

Banana Chai Cookies


*Ask an adult for help
Prep Time: 10 minutes
Cook Time: 20 minutes
Makes: 30 cookies

You Will Need:
  • Large bowl
  • Small bowl
  • Fork
  • Measuring cups
  • Measuring spoons
  • Parchment paper
  • Baking sheets
Ingredients
  • 5 ripe bananas
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamon
  • 1/8 tsp ground cloves
  • 1/8 tsp ground nutmeg
  • 1 1/2 cups gluten free, quick cooking oats
  • 1 tsp baking powder
  • Optional: 2 tsp dark chocolate chips
Instructions
  1. Preheat the oven to 350°F/175°C
  2. In a large bowl, mash the bananas
  3. Stir in the vanilla extract
  4. In a smaller dish, mix together the spices and baking powder
  5. Add the spices to the bananas and mix well
  6. Stir in the oats (and dark chocolate chips)
  7. Spoon the batter onto the baking sheets - making 1 inch wide cookies
  8. Cook for 20 minutes
  9. Let cool for 5 minutes and enjoy!

Recipe: Sharlotka Cake

To help celebrate the recent release of Club Penguin in Russian, make a Sharlotka cake to celebrate!

You Will Need:
  • 2 mixing bowls
  • Bundt pan or a 9x9 baking dish
  • Spatula
  • Cooking spray or butter
  • Measuring cups and spoons
Ingredients
  • 1 tsp cinnamon
  • 4 granny smith apples
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • Pinch of salt
  • 4 eggs
Gluten Free Ingredients
  • 1 tsp cinnamon
  • 4 granny smith apples
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup rice flower
  • 1/2 tsp xantham gum
  • Pinch of salt
  • 4 eggs
Instructions
  1. Start by peeling, coring, and cutting up the apples into 1 inch pieces
  2. Place them into a big bowl and sprinkle cinnamon over the top
  3. Mix the apples and cinnamon until all the apples have a light coating
  4. Preheat your oven to 350 F (175 C)
  5. In another bowl beat the eggs
  6. Add in the sugar and mix until all the sugar is dissolved
  7. Mix in the vanilla
  8. Add in a pinch of salt
  9. Sift in the flour and stir until everything is combined (It should look like pancake mix!) Note: if you're using rice flour, combine your flour and xantham gum together before adding it into the wet ingredients.
  10. Lightly grease a baking dish
  11. Scoop a little bit of the cake mix into the dish
  12. Add all the apples
  13. Pour the rest of the cake mix over the apples
  14. Let the mix settle in between all the apple pieces
  15. Cook for 30-40 minutes
  16. You can check if your cake is done by inserting a toothpick into the cake, if it comes out clean, you're done!
  17. If you used a Bundt pan, use a spatula to pull the cake away from the sides of the pan
  18. Let cool for about 10 minutes before removing from the pan (ask an adult for help with this)

Recipes: Melon Smoothie

Healthy Meter: 2/3
Makes: 4 smoothies
You Will Need
  • Blender
  • Small baking tray or pan
  • Cling film
Ingredients
  • 4 cups watermelon
  • 1/2 cup lemonade
  • 1 cup pitted cherries
  • 3 big scoops of frozen yogurt

Instructions
  1. Cut your melon into cubes
  2. Place your cubed fruit onto the baking tray, cover it with cling film and place in the freezer for about an hour or two
  3. Put the frozen melon into the blender
  4. Add your lemonade, cherries, and frozen yogurt
  5. Blend until smooth, and enjoy!
  • Instead of cherries you can also try strawberries, pineapple, or your other favorite fruit!
  • And if you're interested in something a little different, chop up a fresh mint leaf and add it to the blender
